Also, it has excellent abrasion resistance and cutting power. It maintains a sharp blade even if it is used for a long time. The long and narrow blade is perfectly designed when slicing and cutting fillet for sashimi without compromising meat quality. It is beveled and sharpened on the right side of the blade for right handed users only.
