The Global Sai Vegetable Knife draws from a traditional Japanese design but is made with a thinner core blade of advanced CHROMOVO 18 steel clad by two layers of SUS410 stainless steel. The thinner blade is beveled at a mere 12.5° bevel for an ultra-sharp and fine edge that absolutely races through prep work, chopping and slicing with effortless precision. Use it for most any large, medium or small vegetable prep. The near-straight blade is more suited to a lift-and-chop motion than a rocking motion. The Sai Series from Global is a the top-of-the-line collection of kitchen cutlery for the professional or serious home chef. The blades are individually hammered, ice-tempered and hardened to Rockwell C58° - C59°. The blade transitions smoothly and seamlessly into the ergonomically shaped stainless handle. A contoured thumb rest helps ensure grip and control and the hollowed handle is filled with sand to achieve a precise weight for the perfect balance.
