Dragon Ice Paring Knife

Aside from the chef knife, the paring knife is the most-used blade in a kitchen cutlery arsenal. Used for peeling, coring, trimming and many smaller food prep tasks, the Dragon Ice 3.5" Paring Knife surpasses other brands with both materials and design. The BD1N nitrogen enhanced stainless steel stays sharp longer not only because it is harder, but also because it is higher quality, fine-grained steel that is surprisingly simple to maintain. A wider blade profile than is commonly found helps home cooks enjoy the full use of the edge on a cutting board. The G-10 handle is both comfortable and secure in the hand while the angled bolster assists with grip. Additionally, because the bolster does not extend to the cutting edge, this paring knife is easier to sharpen properly.


About Dragon Ice Cutlery

The Apogee Culinary Dragon Ice knives feature a slim profile with a 2.5-millimeter-thick blade, making them easy to maneuver in tight areas. Each knife has a nitrogen-enriched American BD1N steel blade with a Rockwell hardness of 63 to maintain its edge. Ergonomically crafted from G-10, the handle is smooth and grippy, with three polished stainless steel bolsters to hold it together. The transition from the handle to the blade is sculpted at an angle for a chef's-recommended pinch grip. You'll want to wash these knives by hand to ensure they stay in good condition over time.
